After three weekends in a row of traveling, I’m so excited to be spending the next three weekends in NYC, enjoying the warm weather and soaking up my last few weeks in my residency program. As you’ve probably gathered from previous posts and Instagram photos, I’m pretty obsessed with my co-residents. Thinking of going to work everyday without them is already starting to break my heart! But change is inevitable, and I’m just trying to enjoy our time working side by side as much as possible. Lots of parties coming up to celebrate. And these special chocolate-covered strawberries are a great way to celebrate a lot of things this time of year – strawberry season, s’mores season, and end-of-residency season as well!
When I learned that you can microwave marshmallow Fluff to thin it out for dipping, I knew these strawberries had to be made ASAP. Plus, since I’ve been so busy traveling and celebrating bachelorettes, weddings, and life, I was very excited for another easy recipe to tackle. And no oven once again! And as if I needed any more reasons, I LOVE the excuse to break out my kitchen torch. The concept of these fancy strawberries is genius – it’s basically a s’mores wrapped around a strawberry. Perfect for summer parties! Chocolate-covered strawberries are a guaranteed party-pleaser, and adding melted Fluff and crushed graham cracker crumbs just take them to the next level.
I can’t stop buying strawberries this time of year – they’re so juicy and sweet, I find them irresistible. It’s the perfect time of year for them, and why not dip them in marshmallow Fluff and chocolate for your next party. Simple flags made out of toothpicks and washi tape made for really cute toppers for these, and you can change out the colors to match whatever event you’re celebrating. This summer will truly be bittersweet for me. I’m so excited to finally get a real job, officially be a pediatric dentist, and move onto the next step of my life, but I know I will struggle with the transition as I leave some of my best friends behind. It’s all part of growing up, I suppose! Excuse me while I go drown my tears in chocolate-covered strawberries…
S'Mores Chocolate-Covered Strawberries
Yield: 16 strawberries
Ingredients:
16 medium/large strawberries
1 cup marshmallow Fluff
4 oz semisweet melting chocolate
3 graham crackers, crushed
Directions:
Wash and dry strawberries and set aside. Place wax paper on a large cookie sheet. Transfer Fluff to a microwave-safe bowl, and microwave for 20 seconds, until melted. Dip each strawberry into the melted Fluff and set on the prepared sheet. Allow the marshmallow to set by leaving them at room temperature for about 20 minutes, or transfer to the fridge for 5 minutes. Use a kitchen torch to lightly brown the top half of the marshmallow on each strawberry. I used an inverted glass cup to put the strawberries on and toast them so the flame didn't melt the wax paper.
Melt the chocolate in a small bowl in 30 second intervals, stirring well in between each interval, until completely smooth. Dip the ends of the Fluff-covered strawberries and return to wax paper-covered cookie sheet. Sprinkle with crushed graham crackers (my crumbs were a little too fine for my liking, keep them chunkier if you want a different look!).
