As I reflect on this past year, I can’t help but mostly think about my wedding. It was the best day of my life so far, and so of course it’s the top of favorite 2013 moments as well. But in addition to becoming a Mrs., I also became a Dr., moved to NYC, starting earning my first real salary in a dream program, traveled to Spain, Portugal, California (and Florida, of course), filmed my first national TV segment, and continued doing what I love here on the blog. Ohh, 2013 you’re going to be hard, if not impossible, to beat!! There’s a lot of introspection and flipograms going on these days, but if your Facebook newsfeed looks anything like mine, there’s also a lot of engagements. Something about the time between Thanksgiving and New Year’s makes so many guys jump to their knees. So even though I’m sad my wedding year is coming to a close, I’m so, so excited to that among many other friends, my maid of honor and a bridesmaid of mine have gained their own fiances in the past few months.
Since I’ve already made engagement ring sugar cookies, to celebrate these recently engaged friends I’ve had to be a bit more creative to make their beloved new rings edible. These cookie butter rice krispie treat rings were made for my friends Marissa and Jeff who got engaged Thanksgiving weekend and had a party in the city a few weeks later. If you remember, Marissa made Ryan and I beautiful cookies when we got engaged, so I definitely wanted to return the favor. Inspired by the popular Christmas wreath rice krispie treats, I decided to deck out some krispies with a blingy Hershey’s kiss and plenty of sanding sugar and disco dust. The addition of cookie butter had several reasons – 1) Marissa and Jeff love speculoos, 2) I needed an excuse to buy a jar from Trader Joe’s, and 3) there was no way Erica Sweet Tooth would give friends plain rice krispie treats. I’ve done funfetti, Nutella, and peanut butter, so it was only a matter of time before I threw cookie butter into the mix :)
Although rice krispie treats are one of the easiest and fastest desserts out there, making them into rings takes a bit more patience. But throw on a few episodes of Scandal like I did and you’ll have them done in no time :) I ended up making the ring shapes freeform but you could also try to use a donut pan or other round pan if you want all of your rings to be exactly the same size. The stickiness of the rice krispie mixture helped secure most of the “diamond” kisses, but for some I reinforced them with some extra melted white chocolate. Since Marissa’s ring is platinum I wanted to add silver sanding sugar so the melted white chocolate drizzle helped achieve that too. Although you can’t really notice it in these photos, the added disco dust also made them really sparkle!
These received rave reviews at their party and I was quite addicted to them myself. You don’t have to make them all into rings to enjoy them – just prepare the recipe the traditional way by pressing the mixture into a 9×13″ pan. This will definitely save you a lot of time while still letting you enjoy the delicious flavors! But if you’re looking for a treat to celebrate one of your newly engaged friends, I can promise these will really impress them almost as much as the real rock :)
Engagement Ring Cookie Butter Rice Krispies
Yield: 40 rice krispie treat rings
Ingredients:
4 tbsp unsalted butter
6 cups marshmallows
3/4 cup cookie butter
1 tsp vanilla extract
6 cups rice krispies
40 Hershey kisses
10 oz white chocolate chips, melted for drizzling
Silver sanding sugar/sprinkles/disco dust
Directions:
Place the rice krispies in a large bowl and set aside. Melt the butter and cookie butter together in a medium saucepan over low heat. Once melted, add in the marshmallows. Stir until they are mostly melted, then stir in the vanilla.
Once full combined and melted, remove from heat and pour the marshmallow mixutre over the rice krispies. Stir gently to combine. Form ring shapes with your hands and gently press a Hershey kiss into the top of each ring, compressing the rice krispies around the candy to help secure them. Place completed rings on a wax paper-lined cookie sheet.
Melt the white chocolate chips and transfer to a piping bag or Ziploc bag with the corner snipped off. Drizzle each ring with white chocolate and sprinkle with desired sanding sugars. Allow chocolate to dry then store in an airtight container until ready to serve.

Cookie butter is made from speculoos cookies, like Biscoff. I got my cookie butter from Trader Joe’s, but Biscoff brand makes a spread you can find in most supermarkets I think!
