I’m approaching my 4th blogoversary in a little over 2 months, and believe it or not I’ve never published a blondie recipe on the site. Blasphemy! I just couldn’t handle that any longer, and I also fell in love with the pictures from Tracey’s Culinary Adventures, so it made sense to jump into the recipe ASAP. But of course I had to put my own little spin on it, and naturally that meant the addition of some peanut butter. So even though the name is a little lengthy, these cookies and cream peanut butter blondies are to die for. I knew they’d be amazing before even tasting a bite because just look at them!! The specks of Oreos throughout are so fun and the consistency is dense with chewy edges and yea, nothing bad going on here for sure :)
I love everything about blondies – they’re no fuss, chewy, open to tons of adaptions and mix-ins, and easy to share with friends. Silly that I haven’t made some in so long, but I have a feeling I’ll be adapting this recipe again and again now that I’ve caught the blondie bug. Brownies may still be one of my favorite desserts, but blondies still have a special place in my heart mouth. And you can’t be that surprised that I chose Oreos as my mix in, I’m kind of cookies and cream obsessed. Between the cookies and cream popcorn, cookies, ice cream, cake, mini cheesecakes, and now these on the blog, I may be running out of baked goods to add crushed Oreos to. Which is totally a shame, because everyone knows the best part of making a cookies and cream recipe is having to buy a package of Oreos and dealing with the leftover cookies!
And as for the addition of peanut butter, I’m not sure exactly what drove me to include it other than we had a huge jar in our cabinet that was just screaming to be loved. In my opinion you can’t really go wrong with adding peanut butter to most recipes, and these blondies definitely benefited from the salty sweet goodness. Since starting residency I’ve shared the peanut butter and jelly scones and these blondies with everyone, without even realizing both featured peanut butter. Good thing no one’s allergic, and of course no one complained, but I may have to switch it up next time before they think I’m a one flavor type of gal!
If you’re looking for an easy recipe to add to your potluck reportoire that is sure to be a crowd pleaser, definitely consider these blondies! I mean anything involving Oreos and peanut butter held together with a lot of sugar and butter is going to be good, so these are really hard to mess up. Give them a try and make your friends, family, or co-residents very, very happy!
Cookies and Cream Peanut Butter Blondies
Yield: 32 bars
Ingredients:
16 tbsp butter, at room temperature
1 cup light brown sugar
1 cup granulated sugar
1 tsp vanilla extract
1 cup creamy peanut butter
2 eggs
2 cups all purpose flour
1/2 tsp baking powder
1/4 tsp salt
2 cups Oreos, roughly chopped
1 cup white chocolate chips
Directions:
Preheat oven to 350 degrees and line a 9x13 pan with tinfoil, leaving excess on either side to act as handles.
In the bowl of an electric mixer, cream together the butter and sugars until light and fluffy, about 2- 3 minutes. Add the vanilla and peanut butter and beat until smooth. Add the eggs one at a time, scraping the sides of the bowls in between each addition.
In a medium bowl, whisk together the flour, baking powder, and salt. With the mixer on low speed, add the flour mixture to the butter mixture until just combined. With a rubber spatula, fold in the crushed Oreos and white chocolate chips. Transfer batter to the prepared pan and press until evenly distributed. Add some extra crushed Oreos on top for a special touch!
Bake for 25-30 minutes or until the top is golden brown. Let cool completely on a wire rack, then use the tinfoil handles to remove the blondies and cut into squares.

These look so awesome. I’m so glad I finally found some palm oil-free cookies I can use to replace Oreos. They’re not quite as good, but I don’t feel orangutans scowling at me when I eat them. Can’t wait to try this.
